Mud plantain is an emergent aquatic plant, preferring to keep its roots and base underwater and its fleshy foliage about a foot above the water’s surface. In the summer its spindly flower stalks reach up to three feet above the water, each topped with a dainty three-petaled flower. In the fall these flowers turn into red seed heads which are eaten by waterfowl as well as upland birds. This plant is also a food source for fish and some amphibians. Mud plantain filters water very efficiently, making it a great selection for water restoration projects.
